Featured Cheese: Jasper Hill Farms, Cabot Clothbound Cheddar

A cornerstone of their collection, after it comes to the Cellars, it’s coated in lard and an additional layer of cloth. The cheeses ripen in a specially calibrated vault in our Cellars, where they are constantly brushed, turned, and monitored for quality.

SENSORY NOTES  - Clothbound is an approachable but complex natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy with caramel sweetness to the finish.

100% Vermentino. Fresh and maritime scented with notes of lime, apple, shells and moss. Beaming acid gives way to a long and lean finish. It’s superb with salads, couscous, stuffed tomatoes, sushi. Ideal for any relaxing moment.
